The warm, humid micro-climate and rich volcanic soil of Madagascar's Sambirano Valley makes it the ideal place for growing cocoa. The beans yield a distinctive, instantly recognisable hint of raspberry and red fruit taste notes. The farms we use are spread out and tricky to reach. Usually a family affair, our cocoa farms have a French legacy and the farmers still use ancient French bullock carts to transport the just-harvested cocoa pods to the fermentary.
